Stealth Mode/90DNS doesn't block everything, apparently people are still getting update notifications with them, so I recommend installing Incognito and storing the PRODINFO backup it generates somewhere safe (not on the SD as malicious homebrew could steal it), as without it your Switch can never use Nintendo's online services.
